Cream Cheese or Mascarpone Frosting

This recipe can be used with either cream or mascarpone cheese. Mascarpone is more expensive and difficult to find, but it has a milder flavor and gives a creamier frosting. This mascarpone frosting is actually my personal favorite.

The amount of powdered evaporated cane juice (sold as "organic" powdered sugar) given here is typical for the amount of sugar used for cream cheese frosting. I used only 4 parts powdered evaporated cane juice and it was plenty sweet for me. So adjust to your taste.

If you want to add color to this frosting, use natural food colors.

1 part soft butter
4 parts room-temperature cream cheese
8 parts sifted powdered unrefined cane sugar (sold as "organic" powdered sugar)
Vanilla extract to taste
Milk or cream to desired consistency

  1. Cream butter and sugar together with an electric mixer.
  2. Beat well on medium speed, scraping down the sides often, until the two ingredients are well-incorporated.
  3. Add vanilla, then milk or cream a bit at a time until desired consistency.
