Cakes and FrostingsI have only a few cakes here, but there are more to come. I'm finding that the best sweeteners for cakes are the liquid sweeteners, including agave nectar and honey. These blend well with other cake ingredients and produce a moist cake that keeps well. The thing to remember about cake is that while the sweetener may be better than sugar, it still contains the carbohydrate of the flour. Some cakes can be made with whole grain flours, but it's still a carbohydrate. I think that cake is best reserved for special occasions, such as birthdays and weddings. Then make a special cake and have a small piece. I just realized while writing this that birthdays and weddings are special "occasions," which call for activity that happens "occasionally" instead of everyday. Let cake be something special for special days.
